Casseroles.......

Casseroles seem to be a little bit a 'thing of the past', but I believe they should make a come-back, particularly with our grocery bills rising by the minute and how many people they can feed.   Casseroles can be fattening if you add sour cream or mushroom soup or lots of pastas or rices, but they can be very healthy, too.   Either way, they're very often full of lower-cost foods than we might make otherwise.  Instead of pork chops or lamb chops, ground meats are usually in casseroles and they're usually less costly.  Sometimes, you can throw a bag of frozen vegetables into a casserole and, if you're not watching your carbs, they're often full of rice or noodles, and they're not expensive, either.    (I happen to love tuna noodle casserole but never make it because it's not exactly weight or health conscious!)

Talking about tuna noodle casserole reminds me of a dish I came up with out of sheer desperation while living in Paris.  We hadn't shopped for a while and I was running out of food and we decided to stay in for dinner that night so I found some spaghetti, a large can of tune and lemons and roughly did this:

Z's Pasta and Tuna:
Sauteed a thinly sliced onion on olive oil, added a little garlic if you've got it (Or garlic powder, not garlic salt, never), threw in the tuna(oil or water included) and broke it up into the olive oil, warmed that all up, squeezed lemon juice into it, added enough white wine to make it juicier (add a bit more olive oil if the sauce seems to need a little thickening to stick well enough to the pasta), and then threw cooked spaghetti noodles into that tuna 'sauce'.  I grind a good amount of black pepper on top as tuna and black pepper are such a good combination and it adds a real depth of flavor.  If I have parsley, I finely chop some for the top, and sometimes I throw some grated Parmesan on top. We loved it and I made it for Mr. Z several times even if I did have my refrigerator full of other foods to choose from!  I later took to adding chopped dill, which he adored, or anything else I thought might work.  It's delicious, cheap, and has a lot of things you already have in your house, right?  ENJOY!

Macaroni and cheese, AND..................????

Most of you know I don't believe in adding anything to great mac 'n cheese.   To me, the noodles and cheese are enough if they're delicious.  THAT is 'real' macaroni and cheese.  I'm not a 'designer pizza' person, either...keep smoked duck off my pizza or call it something other than pizza :-) 

BUT.......today, I saw Paula Dean make mac 'n cheese with thinly sliced tomatoes on the top  and I thought that looked pretty good and that the sweetness and moisture of the peeled tomatoes, baked on top, so they're even sweeter, could be a nice addition.........kind of a 'break' from the gorgeous richness of mac 'n cheese.......

The other night, I ordered macaroni and cheese for an APPETIZER at a terrific restaurant nearby which serves mostly less 'traditional' dishes than macaroni and cheese and they make that dish rather 'untraditionally'....My friend had a glass of wine, I had a gimlet, and I don't drink a cocktail without food, so I figured "Why not order a side of macaroni and cheese to share with our drinks?"   Even the waiter laughed and kind of liked the idea.  WE sure did! Their macaroni and cheese is wonderful;  I think there's some Fontina and white Cheddar in the sauce and plenty of rosemary and buttered Panko crumbs on top......fabulous.   So, I do like different cheeses, it doesn't have to be cheddar, and the rosemary was a very nice touch......but I don't go too far from my norm!

DIET is probably a very weird thing to talk about on a food site with a title like mine, but I thought it would be fun to share successful diets some of you might have followed?

So.........what do you do when you want to quickly take off five or ten pounds?   Lots of  salad?  Only protein?  Just stay off sugar?    Let us know!

I have to admit I LOVE macaroni and cheese (as you can tell from my blog's name and image) but there are other things I like which are fattening...like almost every fried thing imaginable!   How about you?

STUFFING/DRESSING.....what's in a name?

I LOVE "whatever you call it"...  We call it stuffing around these parts, I know some call it dressing.   Whatever.  I've scarcely found a stuffing I didn't like.   Odd, because I can't stand Panzanella, a cold salad with wet bread and, let's face it, stuffing IS largely wet bread!
In the past here or at my political blog, I think I've admitted that I never liked my dear Aunt J's stuffing and we have Thanksgiving at their house every year, so I used to bring stuffing for the non-gizzard-loving relatives amongst us, mostly ME :-)  THIS year, Aunt J's having Thanksgiving catered....I can't wait because she uses these caterers for lots of parties they have at their home for  fund raisers or parties of their own over 50 people, etc..and they have really delicious food! (Although Aunt J is just as wonderful cook and a fabulous hostess. it'll be fun to see what the caterers come up with, I'll let y'all know)  I'll bet THEY don't put gizzards in their stuffing!  (Pray for me, will you?!)  (Now I have to 'fess up that, very recently, I actually had started to not HATE Aunt J's gizzard stuffing after about 40 years...!)

SO.................give me your best shot;   WHAT'S YOUR FAVORITE STUFFING?   You don't need to put the recipe in comments, but list main ingredients, those ingredients which set it apart from another stuffing (or dressing!).
